🛒 Ingredients

For the Hazelnut Meringue Layers:

🥚 6 egg whites (room temperature)
🥄 ¾ cup (150g) granulated sugar
🌰 1 ½ cups (150g) finely ground hazelnuts
🥄 ⅓ cup (40g) all-purpose flour
🧂 Pinch of salt

For the Custard Filling:

🥚 6 egg yolks
🥄 ½ cup (100g) granulated sugar
🥛 1 ¼ cups (300ml) milk
🌿 1 teaspoon vanilla extract
🥃 1 tablespoon rum (optional, but traditional!)
🧈 ½ cup (115g) unsalted butter, softened
🌰 ½ cup (50g) finely ground hazelnuts

For the Classic Esterházy Glaze:

🍫 ½ cup (100g) powdered sugar
🥄 2-3 tablespoons milk or water
🍫 2 oz (50g) dark chocolate, melted
