🍰 Rákóczi Túrós (Hungarian Curd Cheese Cake)

For the filling:

  • 500g (2 cups) túró (or well-drained ricotta/cottage cheese) 🧀
  • 100g (½ cup) granulated sugar 🍬
  • 2 egg yolks 🥚
  • 1 tsp vanilla extract 🍦
  • Zest of 1 lemon 🍋
  • 2 tbsp semolina or cornstarch 🌽

For the topping:

  • 4 egg whites 🥚
  • 100g (½ cup) granulated sugar 🍬
  • 4-5 tbsp apricot jam 🍑

👩‍🍳 Instructions

1️⃣ Make the crust

  1. In a bowl, mix the flour, powdered sugar, and baking powder. Add the cold butter and rub it into the flour until it looks like breadcrumbs. 🧈✨
  2. Add the egg yolk and 1 tbsp of sour cream, then knead into a dough. If it’s too dry, add a little more sour cream. 💛
  3. Roll out the dough to fit a greased 9×9-inch (or similar) baking dish. Prick it with a fork and bake at 180°C (350°F) for 10-12 minutes until lightly golden. 🔥

2️⃣ Prepare the filling

  1. In a bowl, mix the túró, sugar, egg yolks, vanilla, lemon zest, and semolina until smooth. 🧀🍋
  2. Spread this creamy filling over the pre-baked crust and bake for another 20 minutes until set. 🍰

3️⃣ Make the meringue & assemble

  1. Beat the egg whites until foamy, then gradually add sugar and beat until stiff peaks form. ⛅✨
  2. Pipe or spread the meringue over the baked filling, leaving small gaps for the apricot jam.
  3. Add small dollops of jam between the meringue swirls for that signature look. 😍🍑
  4. Bake for another 10-12 minutes until the meringue is lightly golden.
