🧁 Traditional Gerbeaud Cake – Recipe Inspired by Lavender & Macarons
✨ Ingredients:
For the dough:
- 3 ½ cups (420 g) all-purpose flour
- 2 sticks (225 g) unsalted butter, cold and cubed
- 1 packet (7 g) active dry yeast
- ½ cup (120 ml) warm milk
- ⅓ cup (70 g) sugar
- 1 egg
- Pinch of salt
For the filling:
- 1 ¼ cups (150 g) ground walnuts
- ¾ cup (150 g) sugar
- 1 ½ cups (350 g) apricot jam (thick, good quality)
For the glaze:
- 5 oz (140 g) dark chocolate
- 1 tbsp oil or 2 tbsp butter
👩🍳 Instructions:
1. Make the dough:
- Dissolve yeast in warm milk with a pinch of sugar. Let it foam for 5–10 mins.
- In a large bowl, rub cold butter into flour with your fingers until crumbly.
- Add sugar, salt, egg, and yeast mixture. Knead gently until smooth and pliable. Chill for 30 minutes.
2. Divide and roll:
- Divide dough into 4 equal parts. Roll each into a rectangle the size of your baking pan (~9×13 in).
3. Layer time:
- Place one layer of dough in the greased or parchment-lined pan. Spread with 1/3 of the jam, then sprinkle 1/3 walnut + sugar mixture.
- Repeat with two more layers.
- Top with final dough layer. Prick with a fork. Cover and let rise for 30–40 minutes.
4. Bake:
- Bake at 350°F (175°C) for 35–40 minutes or until golden and baked through.
- Cool completely.
5. Glaze:
- Melt chocolate and oil/butter together. Spread over the cooled cake. Let set, then slice into diamonds or squares.
💡 Ashley’s Tips:
- Use sour apricot jam for that signature tangy contrast.
- Let the cake rest overnight before slicing — the flavors deepen beautifully.
- Serve with coffee, and pretend you’re in a velvet armchair at Café Gerbeaud in Budapest ✨
