
2. Sauté the Aromatics
In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook for 3–4 minutes until translucent. Stir in the garlic and cook for another 30 seconds until fragrant.
3. Cook the Chicken
Add the cubed chicken to the skillet. Season with salt, pepper, and smoked paprika. Sauté until golden and cooked through — about 6–8 minutes. Transfer the chicken to a bowl and set aside.
4. Sauté the Mushrooms and Spinach
In the same skillet (add a bit more oil if needed), toss in the sliced mushrooms. Cook for 5–7 minutes until they release their moisture and start to brown. Add in the spinach and cook just until wilted (if using fresh). If you’re using frozen spinach, make sure it’s well-drained to avoid excess water in the dish.
5. Create the Creamy Sauce
In a medium bowl, mix together the heavy cream, cream cheese, half the mozzarella, and all of the Parmesan. Stir until smooth — a whisk helps break down the cream cheese.
6. Combine Everything
In a large bowl or directly in the baking dish, mix the chicken, sautéed mushrooms, spinach, and creamy cheese mixture. Stir gently to combine.
7. Top with Cheese and Bake
Spread everything evenly in your greased baking dish. Sprinkle the remaining mozzarella over the top. Bake uncovered for 20–25 minutes, or until bubbly and golden on top. Broil for 2–3 minutes at the end if you want a crispy top layer.
8. Let It Rest
Let the dish rest for about 5–10 minutes before serving — this gives the sauce time to thicken and flavors to settle.
