🧡 Cheesy BBQ Meatloaf over Mashed Potatoes


👩‍🍳 Instructions:

1️⃣ Make the Mashed Potatoes:

  1. Peel, chop, and boil potatoes until fork-tender (about 15–20 min).
  2. Drain and mash with butter and milk. Add salt to taste. Set aside.

2️⃣ Prepare the Meatloaf:

  1. In a large bowl, combine beef, onion, garlic, breadcrumbs, milk, eggs, BBQ sauce, salt, pepper, and paprika.
  2. Mix until just combined — don’t overmix!

3️⃣ Assemble in Tray:

  1. Line a large baking dish or tray with foil.
  2. Spread mashed potatoes evenly on the bottom.
  3. Form individual meatloaves (about 6–8) and place them on top of the potatoes.
  4. Brush tops with extra BBQ sauce.

4️⃣ Bake:

  • Preheat oven to 375°F (190°C).
  • Cover loosely with foil and bake for 25 minutes.
  • Remove foil, sprinkle cheese on top of each meatloaf, and bake uncovered for another 10–15 minutes, until cheese is melty and golden.

5️⃣ Garnish & Serve:

Sprinkle with parsley or chives. Serve straight from the tray!


🔁 Optional Twists:

  • Use pepper jack or mozzarella instead of cheddar.
  • Add jalapeños to the meat mix for a kick.
  • Mix a bit of sour cream or cream cheese into the mash for extra creaminess.
