
👩🍳 Instructions:
1️⃣ Make the Mashed Potatoes:
- Peel, chop, and boil potatoes until fork-tender (about 15–20 min).
- Drain and mash with butter and milk. Add salt to taste. Set aside.
2️⃣ Prepare the Meatloaf:
- In a large bowl, combine beef, onion, garlic, breadcrumbs, milk, eggs, BBQ sauce, salt, pepper, and paprika.
- Mix until just combined — don’t overmix!
3️⃣ Assemble in Tray:
- Line a large baking dish or tray with foil.
- Spread mashed potatoes evenly on the bottom.
- Form individual meatloaves (about 6–8) and place them on top of the potatoes.
- Brush tops with extra BBQ sauce.
4️⃣ Bake:
- Preheat oven to 375°F (190°C).
- Cover loosely with foil and bake for 25 minutes.
- Remove foil, sprinkle cheese on top of each meatloaf, and bake uncovered for another 10–15 minutes, until cheese is melty and golden.
5️⃣ Garnish & Serve:
Sprinkle with parsley or chives. Serve straight from the tray!
🔁 Optional Twists:
- Use pepper jack or mozzarella instead of cheddar.
- Add jalapeños to the meat mix for a kick.
- Mix a bit of sour cream or cream cheese into the mash for extra creaminess.
