Ingredients
For the Chicken:

For the Casserole Base:
- 1 cup sour cream (or plain Greek yogurt for a lighter option)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup cream cheese, softened
- 1 can (10 oz) diced tomatoes with green chilies, drained (e.g., Rotel)
- 1 tsp smoked paprika
- ½ tsp ground cumin
- Salt and pepper to taste
For Topping:
- ½ cup shredded cheddar cheese
