Ingredients

For the Chicken:

  • 1 ½ lbs (680 g) boneless, skinless chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tsp fajita seasoning (store-bought or homemade)

For the Casserole Base:

  • 1 cup sour cream (or plain Greek yogurt for a lighter option)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup cream cheese, softened
  • 1 can (10 oz) diced tomatoes with green chilies, drained (e.g., Rotel)
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and pepper to taste

For Topping:

  • ½ cup shredded cheddar cheese
