  • 1 small onion, diced
  • 2-3 garlic cloves, minced
  • 4 cups chopped cabbage (about half a medium head)
  • 1 large carrot, peeled and diced
  • 1 red bell pepper, diced
  • 1 cup uncooked white rice (optional: substitute with brown rice or omit for low-carb)
  • 4 cups beef broth (or chicken broth for a lighter version)
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
