
Hungarian Goulash (Pörkölt) – A Rich and Hearty Classic
Hungarian Pörkölt is a rich and flavorful beef stew, slowly simmered with paprika, onions, and peppers. Unlike traditional gulyás (goulash soup), Pörkölt is thicker and best served with dumplings, egg noodles, or crusty bread.
Ingredients:
- 2 lbs (900g) beef chuck or stewing beef, cut into bite-sized cubes
- 2 tbsp lard or vegetable oil
- 2 large onions, finely chopped
- 2 tbsp Hungarian sweet paprika
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 2 cloves garlic, minced
- 1 tsp caraway seeds (optional, for authentic flavor)
- 1 medium bell pepper, diced (red or green)
- 1 small tomato, chopped (or 1 tbsp tomato paste)
- 2 cups beef broth (or water)
- ½ cup red wine (optional, for depth of flavor)
- 1 bay leaf (optional)
