Bacon Pasta Casserole


Instructions:

  1. Cook the Pasta:
    • Boil pasta in salted water according to package instructions. Cook until al dente, then drain and set aside.
  2. Cook the Bacon:
    • In a large skillet, cook the bacon until crispy. Remove and set aside on a paper towel to drain. Crumble once cooled. Reserve 2 tablespoons of bacon grease in the skillet.
  3. Sauté the Aromatics:
    • In the same skillet, heat the bacon grease over medium heat. Add the onion and cook until softened (about 3 minutes). Add the garlic and sauté for another 1–2 minutes until fragrant.
  4. Make the Cream Sauce:
    • Stir in the heavy cream and milk. Bring to a simmer and let it thicken slightly, about 5 minutes. Stir in Parmesan cheese, Italian seasoning, red pepper flakes (if using), and season with salt and pepper.
  5. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
  6. Assemble the Casserole:
    • Preheat your oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish and pour the pasta mixture into it.
    • Sprinkle the top with crumbled bacon, mozzarella, and cheddar cheese.
  7. Bake:
    • Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
  8. Serve:
    • Garnish with fresh parsley or chives. Serve warm and enjoy!

  • Add veggies: Toss in cooked broccoli, peas, or spinach for added color and nutrition.
  • Make ahead: Assemble the casserole in advance and refrigerate. Bake just before serving.
