Instructions
Step 1: Prepare the Beef
- Coat the Beef:
- In a large bowl, toss the beef chunks with flour, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Sear the Beef:
- Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Sear the beef in batches (don’t overcrowd the pan) until browned on all sides. Remove the beef and set aside.
- Cook the Aromatics:
- In the same skillet, add the remaining oil if needed, then sauté the chopped onion until soft and golden (about 4–5 minutes). Stir in the minced garlic and cook for 30 seconds, until fragrant.
- Make the Gravy Base:
- Add tomato paste to the skillet and cook for 1–2 minutes, stirring constantly. Gradually pour in the beef broth while scraping the browned bits from the bottom of the pan. Add Worcestershire sauce, soy sauce (if using), thyme, and rosemary. Stir to combine.
- Simmer:
- Return the seared beef to the skillet. Cover and simmer on low heat for 1½–2 hours, stirring occasionally, until the beef is fork-tender. Add water or broth if the gravy thickens too much during cooking.
- For a creamy gravy, stir in heavy cream during the last 10 minutes of cooking.
Step 2: Make the Mashed Potatoes
- Boil the Potatoes:
- In a large pot, cover the peeled and cubed potatoes with cold water. Add a pinch of salt and bring to a boil. Cook for 15–20 minutes, or until the potatoes are fork-tender.
- Mash the Potatoes:
- Drain the potatoes and return them to the pot. Mash them using a potato masher or hand mixer. Stir in the butter and warm milk or cream until smooth and creamy. Season with salt to taste.
Step 3: Serve and Enjoy
- Spoon a generous portion of mashed potatoes onto each plate and top with the tender beef and gravy. Garnish with fresh parsley or thyme for a touch of color. Serve hot with your favorite sides.
Tips for Success
- Vegetable Add-Ins: Add carrots, mushrooms, or peas during the last 30 minutes of cooking for a one-pot meal.
- Shortcut: Use a slow cooker! Sear the beef first, then add all gravy ingredients to the slow cooker and cook on low for 6–8 hours.
- Extra Flavor: Deglaze the pan with a splash of red wine before adding the broth.
Suggested Sides:
- Steamed green beans or roasted asparagus
- Freshly baked dinner rolls or crusty bread
- A crisp green salad for balance
