Beigli: Traditional Hungarian Nut Rolls


Directions 📌

  1. Prepare the dough 🍞:
    • In a large mixing bowl, combine the flour, sugar, salt, and yeast. Add the lukewarm milk, butter, egg yolks, and vanilla extract.
    • Mix everything together until a dough forms. Knead the dough for about 10 minutes until it becomes smooth and elastic.
    • Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.
  2. Make the nut filling 🌰:
    • While the dough is rising, prepare your nut filling. In a small saucepan, combine the ground walnuts, sugar, cinnamon, and milk.
    • Heat over medium heat, stirring constantly, until the mixture becomes a paste-like consistency. Remove from heat and stir in the vanilla extract. Let the filling cool.
    (For poppy seed filling, follow the same instructions, but replace walnuts with ground poppy seeds.)
  3. Shape the Beigli 🍩:
    • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion out into a rectangle (about 1/4-inch thick).
    • Spread the cooled nut (or poppy seed) filling evenly across the dough, leaving a small border on all sides.
  4. Roll and seal the dough 🌯:
    • Carefully roll up each rectangle of dough into a log, sealing the edges to prevent the filling from leaking out during baking.
    • Place each roll onto the prepared baking sheet, shaping them into a slight “U” shape or a long straight line, depending on your preference.
  5. Egg wash & bake 🍞:
    • Brush the tops of the rolls with the beaten egg to give them a golden, shiny finish.
    • Bake the Beigli in the preheated oven for 30-35 minutes, or until golden brown. Let them cool on a wire rack.
