- Mix everything together until a dough forms. Knead the dough for about 10 minutes until it becomes smooth and elastic.
- Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Make the nut filling 🌰:
- While the dough is rising, prepare your nut filling. In a small saucepan, combine the ground walnuts, sugar, cinnamon, and milk.
- Heat over medium heat, stirring constantly, until the mixture becomes a paste-like consistency. Remove from heat and stir in the vanilla extract. Let the filling cool.
- Shape the Beigli 🍩:
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion out into a rectangle (about 1/4-inch thick).
- Spread the cooled nut (or poppy seed) filling evenly across the dough, leaving a small border on all sides.
- Roll and seal the dough 🌯:
- Carefully roll up each rectangle of dough into a log, sealing the edges to prevent the filling from leaking out during baking.
- Place each roll onto the prepared baking sheet, shaping them into a slight “U” shape or a long straight line, depending on your preference.

- Brush the tops of the rolls with the beaten egg to give them a golden, shiny finish.
- Bake the Beigli in the preheated oven for 30-35 minutes, or until golden brown. Let them cool on a wire rack.
