Instructions
Step 1: Prep the Beef
- In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.
Step 2: Brown the Beef
- Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.
- Add the beef in batches, searing each side until browned. Do not overcrowd the pot. Transfer browned beef to a plate and set aside.
Step 3: Cook the Aromatics
- In the same pot, add 1 tablespoon of olive oil if needed. Sauté the chopped onion until softened, about 3–4 minutes.
- Stir in the garlic and tomato paste, cooking for 1–2 minutes until fragrant.
Step 4: Build the Broth
- Pour in the red wine (if using) and scrape the bottom of the pot to deglaze. Let it simmer for 2–3 minutes.
- Add the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir to combine.
Step 5: Add the Beef and Simmer
- Return the browned beef to the pot. Reduce heat to low, cover, and simmer for 1.5–2 hours, stirring occasionally.
Step 6: Add the Vegetables
- Add the carrots, potatoes, and celery to the stew. Continue simmering for 30–40 minutes, or until the vegetables are tender.
- Stir in the frozen peas during the last 10 minutes of cooking.
Step 7: Taste and Adjust
- Taste the stew and adjust seasoning with additional salt, pepper, or Worcestershire sauce if needed.
Step 8: Serve
- Remove the bay leaf before serving. Ladle the stew into bowls and serve hot with crusty bread, rice, or mashed potatoes.
