🍳 Instructions:

  1. Mix dry ingredients
    In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Mix wet ingredients
    In a separate bowl, beat the egg, then add milk, melted butter, and vanilla. Whisk until smooth.
  3. Combine & let rest
    Pour the wet mixture into the dry ingredients. Stir gently until just combined (some lumps are okay!). Let the batter rest for 5–10 minutes — this helps the pancakes get super fluffy.
  4. Heat your pan
    Heat a non-stick pan or griddle over medium-low heat. Add a small pat of butter.
  5. Cook the pancakes
    Pour ¼ cup of batter per pancake. Cook until you see bubbles on the surface and the edges start to look set (about 2–3 minutes). Flip and cook another 1–2 minutes.
  6. Serve warm
    Stack ’em up and serve with maple syrup, fruit, whipped cream, or whatever your heart desires. 😍
