- Mix dry ingredients
In a large bowl, whisk together flour, sugar, baking powder, and salt. - Mix wet ingredients
In a separate bowl, beat the egg, then add milk, melted butter, and vanilla. Whisk until smooth. - Combine & let rest
Pour the wet mixture into the dry ingredients. Stir gently until just combined (some lumps are okay!). Let the batter rest for 5–10 minutes — this helps the pancakes get super fluffy. - Heat your pan
Heat a non-stick pan or griddle over medium-low heat. Add a small pat of butter. - Cook the pancakes
Pour ¼ cup of batter per pancake. Cook until you see bubbles on the surface and the edges start to look set (about 2–3 minutes). Flip and cook another 1–2 minutes. - Serve warm
Stack ’em up and serve with maple syrup, fruit, whipped cream, or whatever your heart desires. 😍
