Caramel Chocolate Crunch Bars

Instructions

Step 1: Prepare the Crunch Layer

  1. Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a saucepan over medium heat, melt the butter, brown sugar, and corn syrup (or honey) together. Stir until the mixture begins to bubble and thickens slightly (about 3 minutes).
  3. Remove from heat and stir in the crispy rice cereal and crushed pretzels until evenly coated.
  4. Press the mixture firmly into the prepared pan to create an even base layer. Chill in the fridge for 15 minutes.

Step 2: Make the Caramel Layer

  1. In a microwave-safe bowl, combine the caramels and heavy cream. Heat in 20-second intervals, stirring each time, until smooth and melted.
  2. Pour the caramel over the chilled crunch layer, spreading evenly with a spatula. Chill again for 10 minutes.

Step 3: Add the Chocolate Layer

  1. Melt the chocolate chips with the coconut oil in the microwave or over a double boiler, stirring until smooth.
  2. Pour the chocolate over the caramel layer, spreading evenly.
  3. Sprinkle with sea salt flakes, nuts, or toffee bits if desired.

Step 4: Set and Slice

  1. Chill the bars in the refrigerator for at least 1 hour or until completely set.
  2. Use the parchment overhang to lift the bars out of the pan. Slice into squares or rectangles using a sharp knife.

Tips and Variations

  • Storage: Store in an airtight container at room temperature for up to 5 days or refrigerate for longer freshness.
  • Flavor Boost: Add a teaspoon of vanilla extract to the crunch layer for extra depth.
