Cheesy Bacon Potatoes with Herbs

Instructions

  1. Prepare the Potatoes:
    • Wash and scrub the potatoes.
    • Boil them in salted water until just tender, about 15–20 minutes. Drain and set aside.
  2. Cook the Sauce:
    • In a skillet, melt the butter over medium heat.
    • Add the minced garlic and sauté for 1–2 minutes until fragrant.
    • Pour in the heavy cream and add smoked paprika (if using), salt, and pepper. Simmer for 3–5 minutes until slightly thickened.
  3. Assemble the Dish:
    • Preheat your oven to 400°F (200°C).
    • Arrange the cooked potatoes in an oven-safe dish or skillet.
    • Pour the cream sauce over the potatoes.
    • Sprinkle the shredded cheese evenly on top.
    • Add the crumbled bacon for extra flavor.
  4. Bake:
    • Bake in the preheated oven for 15–20 minutes, or until the cheese is bubbly and golden brown.
  5. Garnish and Serve:
    • Remove from the oven and garnish with fresh chopped chives or parsley.
    • Serve immediately as a side dish or a main course.

Tips

  • For added texture, you can broil the dish for the last 2–3 minutes of baking.
  • Experiment with different cheeses like gouda, parmesan, or a mix for a richer flavor.
  • Serve with a crisp salad or garlic bread for a complete meal.
