Cheesy Baked Rigatoni with Meat Sauce


Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook rigatoni until just shy of al dente (2 minutes less than the package instructions).
    • Drain and set aside.
  2. Make the Meat Sauce:
    • Heat a large skillet over medium heat. Cook the ground beef or sausage until browned, breaking it into crumbles.
    • Add the diced onion and garlic, and sauté until softened.
    • Stir in marinara sauce, Italian seasoning, red pepper flakes (if using), salt, and pepper. Let it simmer for 10 minutes.
  3. Prepare the Cheese Mixture:
    • In a bowl, mix 1 1/2 cups of mozzarella cheese, ricotta cheese (if using), and 1/2 cup Parmesan cheese.
  4. Assemble the Bake:
    • Preheat your oven to 375°F (190°C).
    • In a large baking dish, spread a thin layer of meat sauce on the bottom.
    • Add a layer of cooked rigatoni. Spoon the cheese mixture over the pasta and spread evenly.
    • Repeat with more meat sauce and pasta, finishing with a generous layer of sauce on top.
    • Sprinkle the remaining mozzarella and Parmesan cheese on top.
  5. Bake:
    • Cover the dish with foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  6. Garnish and Serve:
    • Let the baked rigatoni cool for 5 minutes. Garnish with fresh parsley or basil before serving.
