Cheesy Meatloaf with Tomato Sauce Recipe

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan, eggs, milk, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix until just combined—avoid overmixing to keep the meatloaf tender.
  3. Add the Cheese Filling:
    • Place half of the meatloaf mixture on the prepared baking sheet or in the loaf pan. Shape it into a flat loaf.
    • Sprinkle shredded cheddar or mozzarella cheese over the center, leaving a small border. Top with the remaining meat mixture, sealing the edges to encase the cheese fully.
  4. Make the Tomato Sauce Glaze:
    • In a small bowl, whisk together the ketchup, tomato sauce, brown sugar, mustard (if using), and smoked paprika.
  5. Assemble and Bake:
    • Spread half of the tomato sauce glaze over the top of the meatloaf.
    • Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Add Extra Cheese (Optional):
    • During the last 5 minutes of baking, sprinkle additional shredded cheese on top and return to the oven until melted and bubbly.
  7. Serve:
    • Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, roasted vegetables, or a crisp green salad for a complete meal.

Tips:

  • For added moisture, substitute part of the breadcrumbs with finely chopped mushrooms or grated zucchini.
  • Feel free to experiment with different cheeses for the filling, like gouda, pepper jack, or Swiss.
  • Leftovers make excellent meatloaf sandwiches the next day!
