
Instructions:
Prep the Chicken: Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off the excess.
Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side, until golden brown and cooked through. Remove the chicken and set aside.
Make the Sauce: In the same skillet, add 1 tablespoon of butter. Once melted, pour in the chicken broth, scraping up any brown bits from the bottom of the pan. Stir in the lemon juice and capers, bringing the mixture to a simmer.
Finish the Sauce: Add the remaining 2 tablespoons of butter to the pan and stir until melted, creating a rich sauce.
Serve: Return the chicken breasts to the skillet, spooning the sauce over the top. Cook for another 2-3 minutes to heat the chicken through.
Garnish and Serve: Serve the chicken with extra sauce from the skillet and garnish with fresh parsley if desired.
