Cowboy Meatloaf and Potato Casserole


Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Make the Meatloaf Base:
    • In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, egg, barbecue sauce, Worcestershire sauce, salt, and pepper. Mix until well combined.
    • Press the meat mixture into the prepared baking dish, spreading it evenly.
  3. Bake the Meatloaf:
    • Bake the meatloaf for 20 minutes, then remove it from the oven.
  4. Prepare the Mashed Potatoes:
    • While the meatloaf is baking, mash the cooked potatoes in a large bowl. Add the sour cream, milk, shredded cheddar cheese, garlic powder, and salt. Mix until creamy.
  5. Assemble the Casserole:
    • Spread the mashed potatoes evenly over the partially cooked meatloaf.
    • Sprinkle the remaining shredded cheddar cheese over the top.
  6. Bake Again:
    • Return the dish to the oven and bake for an additional 20–25 minutes, or until the cheese is melted and bubbly.
  7. Add the Toppings:
    • Sprinkle the cooked bacon and green onions (or parsley) over the top of the casserole.
  8. Serve:
