  2. Add beef cubes, season with salt, pepper, and garlic powder, and sear until browned on all sides (about 5 minutes).
  3. Add diced onions and minced garlic, cooking until fragrant.
  4. Pour in beef broth and Worcestershire sauce, then add thyme.
  5. Cover and let simmer on low heat for 1.5 to 2 hours, or until beef is fork-tender. (Alternatively, use a slow cooker for 4-6 hours on low.)

2. Make the Creamy Sauce

  1. Stir in heavy cream, Parmesan cheese, and Dijon mustard.
  2. If using mushrooms, add them now.
  3. Stir in the cornstarch mixture to thicken the sauce. Simmer for 5 more minutes.

3. Cook the Tortellini

  1. In a separate pot, cook cheese tortellini according to package instructions. Drain.

4. Combine & Serve

  1. Add the cooked tortellini to the creamy beef mixture. Stir gently to coat.
  2. Simmer for 2-3 more minutes, allowing flavors to meld together.
  3. Garnish with black pepper, fresh parsley, or extra Parmesan.

5. Enjoy!
