Creamy Cajun Chicken Pasta with a Twist


Instructions:

  1. Season and cook the chicken:
    • Toss the chicken strips with 1 tbsp of Cajun seasoning.
    • Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and fully cooked (about 6–8 minutes). Remove and set aside.
  2. Sauté the veggies:
    • In the same skillet, melt the butter. Add garlic and sauté for 30 seconds until fragrant.
    • Add the bell peppers and cherry tomatoes. Cook for 3–4 minutes until tender but still vibrant.
  3. Make the creamy sauce:
    • Stir in the heavy cream, chicken broth, Parmesan cheese, smoked paprika, and the remaining Cajun seasoning. Simmer on low heat for 5 minutes, stirring frequently.
  4. Add the twist:
    • Stir in the crumbled bacon for a smoky, crispy touch.
    • Return the cooked chicken to the skillet and let it simmer in the sauce for 2–3 minutes.
  5. Combine and serve:
    • Toss the cooked pasta into the skillet, ensuring it’s well-coated with the sauce.
    • Taste and adjust seasoning with salt and pepper as needed.
  6. Garnish and enjoy:
    • Serve hot, garnished with parsley or green onions. Pair with garlic bread or a fresh side salad for a complete meal.
