Crockpot Cheesesteak Potato Casserole


Instructions

1. Prepare the Steak:

  • Slice the steak into thin strips if not already pre-sliced.
  • In a skillet, heat olive oil over medium-high heat. Sear the steak strips for 2–3 minutes until lightly browned (they don’t need to be fully cooked).
  • Add Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper to the skillet. Toss to coat the steak. Set aside.

2. Layer the Ingredients in the Crockpot:

  • Spray the crockpot with non-stick cooking spray.
  • Layer half of the sliced potatoes on the bottom.
  • Add half of the sliced onions, bell peppers, and steak strips.
  • Sprinkle 1 cup of mozzarella and 1/2 cup of provolone cheese over the layer.
  • Repeat the layers with the remaining potatoes, onions, bell peppers, steak, and cheese.

3. Cook:

  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender and the cheese is melted and bubbly.

4. Serve:

  • Once cooked, let the casserole rest for 5 minutes.
  • Scoop into bowls and enjoy warm!

Optional Additions:

  • Top with chopped parsley or green onions for added freshness.
  • Serve with crusty bread or a side salad to complete the meal.
