Instructions
1. Prepare the Steak:
- Slice the steak into thin strips if not already pre-sliced.
- In a skillet, heat olive oil over medium-high heat. Sear the steak strips for 2–3 minutes until lightly browned (they don’t need to be fully cooked).
- Add Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper to the skillet. Toss to coat the steak. Set aside.
2. Layer the Ingredients in the Crockpot:
- Spray the crockpot with non-stick cooking spray.
- Layer half of the sliced potatoes on the bottom.
- Add half of the sliced onions, bell peppers, and steak strips.
- Sprinkle 1 cup of mozzarella and 1/2 cup of provolone cheese over the layer.
- Repeat the layers with the remaining potatoes, onions, bell peppers, steak, and cheese.
3. Cook:
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes are tender and the cheese is melted and bubbly.
4. Serve:
- Once cooked, let the casserole rest for 5 minutes.
- Scoop into bowls and enjoy warm!
