For the Sponge Cake (makes 6 layers):

  • 6 large eggs (room temp)
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (90g) all-purpose flour, sifted
  • 1/4 tsp salt
  • 1 tsp vanilla extract

For the Chocolate Buttercream:

  • 7 oz (200g) semi-sweet chocolate, melted & cooled
  • 1 cup (226g) unsalted butter, room temp
  • 3/4 cup (90g) powdered sugar
  • 2 tsp vanilla extract

For the Caramel Topping:

  • 1/2 cup (100g) granulated sugar
  • 2 tbsp water
  • 1 tsp lemon juice
  • Butter for greasing

1. Bake the Sponge Layers:

  • Preheat oven to 350°F (175°C).
  • Line 6 baking sheets or draw 8″ circles on parchment and bake 1 layer at a time.
  • Beat eggs and sugar until pale and thick (about 8 minutes).
