Instructions:
1. Make the Dough:
- In a small bowl, dissolve the yeast in the warm milk with 1 teaspoon of sugar. Let it sit for 5-10 minutes, until it becomes frothy.
- In a large mixing bowl, combine the flour, remaining sugar, salt, and nutmeg (if using). Add the yeast mixture, eggs, melted butter, and vanilla extract.
- Mix everything together until the dough comes together. Then knead the dough on a lightly floured surface for about 8-10 minutes, until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5-7 minutes.
- Place the dough in a lightly oiled bowl, cover it with a clean towel or plastic wrap, and let it rise for about 1-1.5 hours, or until doubled in size.
2. Shape the Doughnuts:
- Once the dough has risen, punch it down to remove any air bubbles. Roll the dough out on a floured surface to about 1/2-inch thickness.
- Use a round cutter or a large glass to cut out doughnut shapes. For the hole, use a smaller cutter or bottle cap to punch a hole in the center.
- Place the doughnuts and doughnut holes on a floured baking sheet or tray, cover them with a towel, and let them rise again for about 30-40 minutes.
3. Fry the Doughnuts:
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Make sure there’s enough oil to fully submerge the doughnuts.
- Carefully drop the doughnuts into the hot oil, being careful not to overcrowd them. Fry for 1-2 minutes on each side, or until golden brown.
- Remove the doughnuts with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
4. Make the Glaze:
- In a medium bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of salt. Add more milk if you prefer a thinner glaze.
- Dip each warm doughnut into the glaze, covering one side, and set it on a rack to let the glaze set.
5. Serve:
- Allow the glaze to set for a few minutes before serving.
- Enjoy your fresh, homemade doughnuts! You can also sprinkle them with sprinkles or cinnamon sugar for an extra touch.
Tips:
- For a chocolate glaze: Melt 1/2 cup of chocolate chips with 2 tablespoons of butter and mix with 2 tablespoons of milk and powdered sugar for a rich chocolate glaze.
- Filling options: Try filling your doughnuts with jam, chocolate, or cream before frying, using a pastry bag with a filling tip.
I hope you enjoy making these doughnuts! Would you like some ideas for toppings or filling? 😄
