Season the spinach: Add a pinch of salt, pepper, and nutmeg (if using). Stir to combine and remove from the heat. Let the spinach mixture cool for a few minutes.
Mix in the cheeses: Once the spinach mixture has cooled, add the ricotta cheese, feta cheese, and Parmesan cheese. Stir until everything is evenly combined and set aside.

Egg wash: Brush the top of each pastry with a beaten egg to give it a golden, glossy finish when baked.
Bake: Place the stuffed pastries onto your prepared baking sheet and bake in the preheated oven for about 20-25 minutes, or until the puff pastry is golden brown and crispy.
