Ground Beef and Gravy Over Mashed Potatoes

For the Mashed Potatoes:

  • 2 lbs potatoes (Yukon gold or russet potatoes work best)
  • 4 tablespoons butter
  • 1/2 cup milk (or more, depending on desired consistency)
  • Salt and pepper, to taste

Instructions:

Mashed Potatoes:

  1. Peel and cut the potatoes into chunks. Place them in a large pot of salted water and bring to a boil.
  2. Cook the potatoes for about 15-20 minutes or until they are fork-tender.
  3. Drain the potatoes and return them to the pot.
  4. Mash the potatoes using a potato masher or an electric mixer.
  5. Add butter, milk, salt, and pepper, then mash again until smooth and creamy. Set aside and keep warm.

Ground Beef and Gravy:

  1. In a large skillet, brown the ground beef over medium heat, breaking it apart with a spatula. Once browned, drain any excess fat.
  2. Add the chopped onions and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute.
  3. Sprinkle the flour over the beef mixture and stir to combine. This will help thicken the gravy.
  4. Slowly pour in the beef broth, stirring constantly to prevent lumps. Add Worcestershire sauce, thyme, salt, and pepper.
  5. Bring the mixture to a simmer and cook for about 5-7 minutes, or until the gravy has thickened.
  6. Optional: Stir in butter for extra richness.

Serve:

  1. Scoop a generous portion of mashed potatoes onto a plate.
  2. Pour the beef and gravy mixture over the mashed potatoes.
  3. Serve with extra pepper or herbs, if desired.

This hearty meal is perfect for a cozy dinner. It pairs well with green beans or steamed vegetables!
