- Prepare the Beef:

- In the same skillet, add a bit more oil if needed. Pour in the beaten eggs and scramble them until just set. Remove and set aside with the beef.

- Add the remaining oil to the skillet. Sauté the onion and garlic until fragrant, about 1 minute.
- Add the mixed vegetables and stir-fry for 2–3 minutes until tender.
- Combine Ingredients:
- Push the vegetables to one side of the skillet. Add the rice and stir-fry for 2–3 minutes, breaking up any clumps.
- Stir in the soy sauce, oyster sauce, and sesame oil, mixing everything well.
- Add Beef and Eggs:
- Return the cooked beef and scrambled eggs to the skillet. Stir-fry for another 2 minutes until everything is well combined and heated through.
- Garnish and Serve:
- Sprinkle with green onions and serve hot.

- Rice matters: Use leftover, day-old rice for the best texture. Freshly cooked rice may be too moist and sticky.
