Homemade Mexican Pizza

Instructions:

Preheat oven: Set your oven to 375°F. Spray two baking sheets with non-stick spray and arrange 3 tortillas on each sheet.

Crisp the tortillas: Bake tortillas for 3-5 minutes, flip, and bake for another 2-5 minutes until golden and crispy. Set aside.

Cook the beef: In a skillet, cook and crumble the ground beef over medium-high heat. Drain the grease and add taco seasoning and water. Bring to a boil, reduce heat, and simmer for 10 minutes.

Warm the beans: Microwave the refried beans and spread a thin layer on one tortilla.

Assemble the pizza: Top with 1/3 of the meat mixture, then place another tortilla on top. Spread enchilada sauce over the tortilla, sprinkle with cheddar and pepper-jack cheese. Add diced tomato, green onion, and black olives.

Repeat: Repeat the steps to make 3 pizzas, then bake for 5 minutes or until the cheese is melted and bubbly.
