Step 1: Prepare the Dough

  1. In a large bowl, combine flour, baking powder, salt, and sugar.
  2. Add the cold butter and rub it into the flour with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  3. Add eggs, sour cream, and lemon zest. Knead lightly just until the dough comes together.
  4. Divide dough in half. Wrap both pieces in plastic wrap and chill for 30 minutes.

Step 2: Prepare the Apple Filling

  1. While the dough chills, place grated apples in a large bowl.
  2. Add lemon juice, sugar, cinnamon, cloves, and raisins.
  3. Let sit for 10–15 minutes, then squeeze out excess juice (very important to avoid a soggy crust).
  4. Stir in semolina or breadcrumbs.

Step 3: Assemble

  1. Preheat oven to 350°F (180°C).
  2. Roll out one piece of dough on a floured surface to fit the bottom of a greased or parchment-lined 9×13″ (23x33cm) baking pan.
  3. Gently press the dough into the bottom and slightly up the sides.
  4. Spread the apple mixture evenly over the dough.
  5. Roll out the second dough piece and place it on top, gently pressing the edges together to seal.
  6. Brush top with egg yolk and milk mixture.

Step 4: Bake

  • Bake for 40–45 minutes, or until golden brown on top.
  • Let cool completely before slicing. Dust with powdered sugar just before serving.
