Instructions:

1. Prepare the Broth:

  1. In a large pot, add the beef chunks and cover with cold water (about 8 cups). Bring to a boil over medium-high heat.
  2. As the water starts to boil, skim off the foam and impurities that rise to the top using a spoon. This step ensures a clear broth.
  3. Once the foam is removed, reduce the heat to a simmer. Add the onion (you can char it slightly over an open flame for a smoky flavor), carrots, celery, garlic, peppercorns, bay leaves, thyme, and tomato paste.
  4. Season with salt to taste. Stir everything to combine.

2. Simmer the Broth:

  1. Let the soup simmer gently for about 2.5 to 3 hours, uncovered, until the beef is tender and the broth is rich in flavor. You can occasionally skim off any impurities that appear during the simmering process.
  2. Taste the broth periodically and adjust the seasoning as needed.

3. Strain the Broth:

  1. After the broth has simmered, carefully remove the beef and vegetables. You can discard the vegetables or use them in other dishes, as they’ve already given up most of their flavor.
  2. Strain the broth through a fine-mesh sieve into another pot or large bowl, discarding any remaining solids.

4. Serve:

  1. Return the strained broth to the pot and bring it back to a gentle simmer. Taste for seasoning, and adjust if necessary.
  2. Serve hot, garnished with fresh parsley or thinly sliced green onions, and optionally a small dollop of sour cream on the side for added richness.
