Hungarian Cabbage Noodles (Káposztás Tészta)


Instructions

1. Prepare the Cabbage

  • Remove the outer leaves and finely shred the cabbage using a knife or mandoline.
  • Place the shredded cabbage in a bowl, sprinkle with 1 teaspoon salt, mix, and let it sit for 15 minutes to draw out moisture.
  • Squeeze out excess liquid with your hands or a clean towel.

2. Cook the Cabbage

  • Heat butter and oil in a large pan over medium heat.
  • Add the shredded cabbage and cook slowly, stirring often, for 25-30 minutes until golden brown and caramelized.
  • Stir in black pepper and sugar (if using).

3. Cook the Noodles

  • While the cabbage cooks, boil water in a pot, add salt, and cook the egg noodles according to package instructions.
  • Drain and set aside.

4. Combine & Serve

  • Toss the cooked noodles with the caramelized cabbage.
  • Adjust seasoning with more salt and pepper if needed.
