1️⃣ Prepare the Batter:
- In a mixing bowl, whisk together the eggs, sugar, salt, and half of the milk.
- Gradually add the flour while whisking to avoid lumps.
- Pour in the remaining milk and sparkling water, then mix in the oil.
- Let the batter rest for 15-30 minutes (optional, but helps with texture).
2️⃣ Cook the Crepes:
- Heat a non-stick pan over medium heat and lightly grease it with butter or oil.
- Pour about ¼ cup of batter into the pan, swirling it to spread evenly.
- Cook for about 1-2 minutes, then flip and cook for another 30 seconds.
3️⃣ Fill & Serve:
- Spread with jam, Nutella, cinnamon sugar, or sweetened cottage cheese for a sweet version.
- For savory crepes, fill with cheese, ham, mushrooms, or sour cream.
