Hungarian Gerbeaud Cake – Zserbó szelet -🇭🇺

👩‍🍳 Instructions

1. Prepare the Dough:

  1. In a large bowl, mix the flour, sugar, and salt.
  2. Add the cold butter and rub into the flour until it resembles coarse crumbs.
  3. Mix in the egg yolks, lemon zest, and yeast dissolved in the warm milk.
  4. Knead until the dough comes together into a smooth ball. Cover and let rise for about 1 hour in a warm place (if using fresh yeast), or chill for 30 mins (if using instant yeast and cold butter method).

2. Roll and Layer:

  1. Divide dough into 4 equal parts.
  2. Roll out the first part and fit it into a greased or parchment-lined 9×13″ (23×33 cm) baking pan.
  3. Spread 1/3 of the apricot jam over the dough, sprinkle with 1/3 of the walnut-sugar mixture.
  4. Repeat with the second and third layers of dough, jam, and nuts.
  5. Top with the final rolled-out dough layer. Prick the surface with a fork to prevent bubbling.

3. Bake:

  • Preheat oven to 350°F (175°C).
  • Bake for 35–40 minutes, or until the top is golden and firm.
  • Let it cool completely before glazing.

4. Make the Chocolate Glaze:

  1. Melt chocolate and butter together in a heatproof bowl over simmering water (or microwave in short bursts).
  2. Stir until smooth, adding oil if you’d like extra shine.
  3. Pour over the cooled cake and use a spatula to spread evenly.

5. Slice and Serve:

  • Let the glaze set fully (you can refrigerate briefly).
  • Cut into small rectangular slices with a sharp knife, cleaning between slices for clean edges.
