👩🍳 Instructions:
- Sauté the onions in lard or oil until soft and lightly golden.
- Remove from heat briefly and stir in the paprika (this keeps it from burning and turning bitter).
- Add beef cubes and stir well to coat with paprika and onions.
- Cook the meat until browned, about 10 minutes. Stir in garlic, caraway seeds, and tomatoes/paste.
- Pour in broth or water just enough to cover the meat. Simmer on low for about 45 minutes, until beef is getting tender.
- Add carrots, parsnip, and pepper. Continue to simmer for 20 minutes.
- Add potatoes and a bit more broth if needed. Simmer until everything is soft and flavors are blended, about 25 minutes.
- Season with salt & pepper. Serve hot, topped with fresh parsley.
🍽️ Serving Suggestions:
- Serve with csipetke (Hungarian pinched noodles), crusty bread, or even over nokedli.
- Pairs wonderfully with a glass of Egri Bikavér (Bull’s Blood wine).
