
Hungarian Lungs with Bread Dumplings (Szalontüdő / Savanyútüdő) Recipe
This traditional Hungarian dish is a flavorful organ meat stew, usually made with pork or beef lungs, cooked in a tangy sauce and served with soft bread dumplings.
Ingredients for Szalontüdő:
- 1 kg (2.2 lbs) pork or beef lungs (with heart, optional)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp lard or vegetable oil
- 1 tbsp flour
- 1 tbsp sweet Hungarian paprika
- 1 tbsp vinegar (apple cider or white)
- 1 tsp sugar
- 1 tsp mustard
- 2 bay leaves
- 1 tsp caraway seeds
- Salt and black pepper, to taste
- 1 liter (4 cups) beef or pork broth
- ½ cup sour cream (for creamier sauce, optional)
