
Instructions
1. Prepare the Pork
- Heat the oil or lard in a large pot over medium heat.
- Add the cubed pork and brown on all sides, about 6-8 minutes. Remove the pork from the pot and set it aside.
2. Sauté the Vegetables
- In the same pot, add the chopped onion and cook for about 5 minutes, until soft and golden.
- Add the garlic and cook for another 1-2 minutes until fragrant.
3. Add Paprika & Tomatoes
- Stir in the sweet paprika and caraway seeds (if using), then add the chopped tomato and tomato paste.
- Stir everything well and cook for 3-5 minutes, allowing the tomatoes to break down and release their juices.
4. Cook the Pork with Rice
- Return the browned pork to the pot and mix well with the tomato and onion mixture.
- Add the rice and stir to coat it with the flavorful mixture.
- Pour in the broth and add a bay leaf. Season with salt and black pepper to taste.
- Bring everything to a boil, then reduce the heat to low and cover the pot.
5. Simmer
- Let the dish simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid. Check occasionally to make sure the rice isn’t sticking to the bottom. If necessary, add a little more broth or water.
6. Serve & Garnish
- Once the rice is tender and the pork is fully cooked, remove the bay leaf.
- Garnish with fresh parsley and serve hot.
