Hungarian Pork rice pilaf (bácskai rizses hús)


Instructions

1. Prepare the Pork

  1. Heat the oil or lard in a large pot over medium heat.
  2. Add the cubed pork and brown on all sides, about 6-8 minutes. Remove the pork from the pot and set it aside.

2. Sauté the Vegetables

  1. In the same pot, add the chopped onion and cook for about 5 minutes, until soft and golden.
  2. Add the garlic and cook for another 1-2 minutes until fragrant.

3. Add Paprika & Tomatoes

  1. Stir in the sweet paprika and caraway seeds (if using), then add the chopped tomato and tomato paste.
  2. Stir everything well and cook for 3-5 minutes, allowing the tomatoes to break down and release their juices.

4. Cook the Pork with Rice

  1. Return the browned pork to the pot and mix well with the tomato and onion mixture.
  2. Add the rice and stir to coat it with the flavorful mixture.
  3. Pour in the broth and add a bay leaf. Season with salt and black pepper to taste.
  4. Bring everything to a boil, then reduce the heat to low and cover the pot.

5. Simmer

  1. Let the dish simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid. Check occasionally to make sure the rice isn’t sticking to the bottom. If necessary, add a little more broth or water.

6. Serve & Garnish

  1. Once the rice is tender and the pork is fully cooked, remove the bay leaf.
  2. Garnish with fresh parsley and serve hot.
