Classic Italian Lasagne with Meat and Tomato

Ingredients (Serves 8-10)

For the Meat Sauce (Ragù di Carne):
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 medium carrots, finely diced
  • 2 celery stalks, finely diced
  • 3 garlic cloves, minced
  • 500g (1 lb) ground beef
  • 250g (½ lb) ground pork
  • 1 cup red wine
  • 800g (28 oz) canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
For the Béchamel Sauce:
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk, warmed
  • A pinch of nutmeg
  • Salt to taste
Other Ingredients:
  • 12 sheets of lasagne pasta (no-boil or pre-cooked)
  • 250g (2 cups) grated mozzarella cheese
  • 100g (1 cup) grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)
