Mangalica pork chop

Instructions:

  1. Prepare the pork chops
    • Remove pork chops from the fridge 30 minutes before cooking to bring them to room temperature.
    • Pat them dry with a paper towel and season with salt, black pepper, and paprika on both sides.
  2. Sear the chops
    • Heat olive oil in a cast-iron skillet over medium-high heat.
    • Add the pork chops and sear for 3-4 minutes on one side until golden brown.
  3. Baste with butter
    • Flip the pork chops and reduce heat to medium-low.
    • Add butter, garlic, and thyme (or rosemary) to the pan.
    • Tilt the pan and use a spoon to baste the pork chops with melted butter for 2-3 minutes.
  4. Rest before serving
    • Remove from the skillet and let the chops rest for 5 minutes.
    • Drizzle with lemon juice for extra brightness (optional).
