
Instructions:
- Prepare the pork chops
- Remove pork chops from the fridge 30 minutes before cooking to bring them to room temperature.
- Pat them dry with a paper towel and season with salt, black pepper, and paprika on both sides.
- Sear the chops
- Heat olive oil in a cast-iron skillet over medium-high heat.
- Add the pork chops and sear for 3-4 minutes on one side until golden brown.
- Baste with butter
- Flip the pork chops and reduce heat to medium-low.
- Add butter, garlic, and thyme (or rosemary) to the pan.
- Tilt the pan and use a spoon to baste the pork chops with melted butter for 2-3 minutes.
- Rest before serving
- Remove from the skillet and let the chops rest for 5 minutes.
- Drizzle with lemon juice for extra brightness (optional).
