Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray. - Cook the Ground Beef:
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked.
- Drain excess grease.
- Add Seasonings and Veggies:
- Stir in the taco seasoning, Rotel, black beans, and corn. Cook for 2–3 minutes until everything is well combined.
- Mix the Creamy Base:
- In a large mixing bowl, combine the cream of chicken soup and sour cream (if using). Mix the soup mixture into the beef and veggie mixture.
- Layer the Casserole:
- Spread half of the crushed Doritos evenly in the bottom of the prepared baking dish.
- Pour the beef mixture on top of the Doritos, spreading it out evenly.
- Sprinkle 1½ cups of shredded cheese over the beef mixture.
- Top with the remaining crushed Doritos.
- Bake the Casserole:
- Place the casserole in the preheated oven and bake for 20–25 minutes, or until bubbly and the cheese is melted.
- Garnish and Serve:
- Remove the casserole from the oven and sprinkle the remaining cheese on top. Let it melt for 5 minutes.
- Garnish with your favorite toppings, such as chopped cilantro, sliced jalapeños, or a dollop of sour cream.
