Mexican White Trash Casserole,


Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Cook the Ground Beef:
    • In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked.
    • Drain excess grease.
  3. Add Seasonings and Veggies:
    • Stir in the taco seasoning, Rotel, black beans, and corn. Cook for 2–3 minutes until everything is well combined.
  4. Mix the Creamy Base:
    • In a large mixing bowl, combine the cream of chicken soup and sour cream (if using). Mix the soup mixture into the beef and veggie mixture.
  5. Layer the Casserole:
    • Spread half of the crushed Doritos evenly in the bottom of the prepared baking dish.
    • Pour the beef mixture on top of the Doritos, spreading it out evenly.
    • Sprinkle 1½ cups of shredded cheese over the beef mixture.
    • Top with the remaining crushed Doritos.
  6. Bake the Casserole:
    • Place the casserole in the preheated oven and bake for 20–25 minutes, or until bubbly and the cheese is melted.
  7. Garnish and Serve:
    • Remove the casserole from the oven and sprinkle the remaining cheese on top. Let it melt for 5 minutes.
    • Garnish with your favorite toppings, such as chopped cilantro, sliced jalapeños, or a dollop of sour cream.

Serving Suggestions:

Serve this casserole warm with a side of guacamole, salsa, or a green salad to balance out the richness. It’s also great with a squeeze of lime on top!


Storage Tips:

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or microwave, but keep in mind the Doritos may lose some of their crunch.
