Instructions
Step 1: Prepare the Apples
- Peel, core, and dice the apples into small cubes. Set them aside in a bowl.
Step 2: Make the Batter
- Preheat your oven to 350°F (180°C) and grease a rectangular baking dish with butter. Lightly dust it with flour or line it with parchment paper.
- In a large mixing bowl, beat the eggs and sugar together until pale and creamy.
- Add the vegetable oil (or melted butter), milk, and vanilla extract. Mix until well combined.
- In another bowl, sift together the flour, baking powder, cinnamon (if using), and salt. Gradually add the dry ingredients to the wet mixture, mixing gently until smooth.
Step 3: Combine Batter and Apples
- Add the diced apples to the batter, folding them in gently until they are evenly coated.
- Pour the apple mixture into the prepared baking dish. Smooth the top with a spatula.
Step 4: Bake
- Place the baking dish in the preheated oven and bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- If the top starts to brown too quickly, cover it loosely with aluminum foil during the last 10 minutes of baking.
Step 5: Cool and Serve
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice into squares and serve warm or at room temperature. Optional: Dust with powdered sugar or serve with a dollop of whipped cream.
