Instructions
- Cook the Chicken
- Heat olive oil in a large skillet or pot over medium heat.
- Season chicken with Italian seasoning, garlic powder, salt, and pepper.
- Add the chicken to the pot and cook until golden brown and cooked through, about 5-7 minutes. Remove from the pot and set aside.
- Sauté Aromatics and Sun-Dried Tomatoes
- In the same pot, add a little more olive oil if needed.
- Sauté the garlic until fragrant, about 1 minute.
- Add the sun-dried tomatoes and cook for another minute.
- Simmer with Pasta
- Pour in the chicken broth and heavy cream. Stir well.
- Bring to a boil and add the pasta. Reduce the heat to medium-low and cover.
- Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
- Add Spinach and Chicken
- Stir in the fresh spinach, allowing it to wilt.
- Add the cooked chicken back to the pot. Mix well.
- Finish with Parmesan
- Stir in the Parmesan cheese until melted and creamy.
- Adjust seasoning with salt, pepper, and red pepper flakes, if using.
- Serve and Enjoy
- Serve hot, garnished with extra Parmesan and a sprinkle of fresh parsley if desired.

For a deeper flavor, use sun-dried tomatoes packed in oil, and drizzle a bit of the oil into the pot during cooking!
