One Pot Creamy Sun Dried Tomato and Spinach Pasta with Chicken


Instructions

  1. Cook the Chicken
    • Heat olive oil in a large skillet or pot over medium heat.
    • Season chicken with Italian seasoning, garlic powder, salt, and pepper.
    • Add the chicken to the pot and cook until golden brown and cooked through, about 5-7 minutes. Remove from the pot and set aside.
  2. Sauté Aromatics and Sun-Dried Tomatoes
    • In the same pot, add a little more olive oil if needed.
    • Sauté the garlic until fragrant, about 1 minute.
    • Add the sun-dried tomatoes and cook for another minute.
  3. Simmer with Pasta
    • Pour in the chicken broth and heavy cream. Stir well.
    • Bring to a boil and add the pasta. Reduce the heat to medium-low and cover.
    • Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
  4. Add Spinach and Chicken
    • Stir in the fresh spinach, allowing it to wilt.
    • Add the cooked chicken back to the pot. Mix well.
  5. Finish with Parmesan
    • Stir in the Parmesan cheese until melted and creamy.
    • Adjust seasoning with salt, pepper, and red pepper flakes, if using.
  6. Serve and Enjoy
    • Serve hot, garnished with extra Parmesan and a sprinkle of fresh parsley if desired.
