One Pot Mexican Rice Casserole

Instructions

1. Cook the Meat and Veggies:

  1. In a large, deep skillet or pot, cook the ground beef over medium heat until browned.
  2. Add the diced onion, bell pepper, and garlic. Cook for 3–4 minutes, until softened. Drain excess fat if necessary.

2. Add the Base Ingredients:

  1. Stir in the uncooked rice, diced tomatoes (with juices), tomato sauce, black beans, chicken broth, frozen corn, and taco seasoning.
  2. Season with salt and pepper to taste.

3. Simmer and Cook:

  1. Bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 18–20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

4. Add the Cheese:

  1. Once the rice is cooked, sprinkle the shredded cheese evenly over the top.
  2. Cover the skillet for 2–3 minutes to allow the cheese to melt.

5. Serve and Garnish:

  • Top with your favorite toppings like cilantro, jalapeños, or avocado. Serve hot and enjoy!
