1. Preheat the oven
Set your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
2. Prepare the cheese sauce
- In a saucepan, melt the butter over medium heat.

- Gradually whisk in the milk until smooth.

3. Layer the casserole
- Layer half the sliced potatoes in the prepared baking dish.
- Top with half the onions and half the sausage slices.
- Pour half the cheese sauce over the layer.
- Repeat with remaining potatoes, onions, sausage, and cheese sauce.
4. Bake
Cover the casserole with foil and bake for 40 minutes.
Uncover and bake for an additional 15–20 minutes, or until the potatoes are fork-tender and the top is golden and bubbly.
5. Serve & Garnish
Let it rest for 5–10 minutes. Sprinkle with chopped parsley before serving for a pop of color and freshness!
