Season the pork chops lightly with salt and pepper on both sides. You can also add a bit of garlic powder if you like extra flavor.
Combine the Ingredients:
In the slow cooker, add the chicken broth, cream of chicken soup, onion soup mix, dry pork gravy mix, and garlic powder. Stir the mixture until all the ingredients are well combined.
Add the Pork Chops:
Place the seasoned bone-in pork chops into the slow cooker, making sure they’re submerged in the gravy mixture as much as possible.
Cook on Low:
Cover and cook on low for 6-7 hours, or until the pork chops are tender and easily pull apart with a fork.
Make the Gravy:
About 30 minutes before serving, whisk the cornstarch with a little cold water (start with about 1/4 cup) to make a slurry. Add the slurry to the slow cooker and stir well.
Continue cooking for the remaining time to allow the gravy to thicken.
