This easy zucchini and potato muffin recipe will delight you!

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or use liners.
  2. Grate & drain zucchini and potato. Squeeze out excess moisture using a clean kitchen towel.
  3. Mix ingredients in a bowl: zucchini, potato, cheese, eggs, flour, baking powder, salt, pepper, garlic powder, and olive oil. Stir until combined.
  4. Fill muffin tin about ¾ full.
