
Instructions:
- Preheat oven to 375°F (190°C). Grease a muffin tin or use liners.
- Grate & drain zucchini and potato. Squeeze out excess moisture using a clean kitchen towel.
- Mix ingredients in a bowl: zucchini, potato, cheese, eggs, flour, baking powder, salt, pepper, garlic powder, and olive oil. Stir until combined.
- Fill muffin tin about ¾ full.
- Bake for 20-25 minutes until golden brown and firm to the touch.
- Cool slightly & enjoy!
