- Activate the yeast:

In a large bowl, combine flour and salt. Add in yeast mixture, butter, egg, and túró. Knead into a soft dough (about 8 mins). It should be slightly sticky but workable. - First rise:
Cover and let rise in a warm place until doubled (about 1 hour). - Shape:
Roll out the dough to 1-inch thick. Use a round cutter to cut out pogácsa. Place on a baking sheet lined with parchment. - Second rise:
Let the cut pogácsa rise another 20–30 mins. Preheat oven to 375°F (190°C). - Finish and bake:
Brush tops with beaten egg. Sprinkle cheese if desired. Bake for 20–25 minutes until puffed and golden.
