Walking Taco Casserole

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Cook the Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess fat.
    • Stir in the taco seasoning mix according to the packet directions (usually adding some water and simmering for a few minutes).
  3. Layer the Casserole:
    • In a greased 9×13-inch baking dish, start by spreading a layer of the crushed tortilla chips.
    • Top the chips with the seasoned ground beef mixture.
    • Add the kidney beans, diced tomatoes with green chilies, and frozen corn, spreading them evenly over the beef layer.
    • Sprinkle the shredded cheddar cheese on top.
  4. Bake:
    • Place the casserole in the oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
  5. Top and Serve:
    • After baking, remove from the oven and let it cool for a few minutes.
    • Top with sour cream, chopped green onions, sliced olives, salsa, and jalapeños, if desired.
    • Serve with additional crushed chips on the side for crunch, and enjoy your Walking Taco Casserole!
